As restaurants in the city continue to be squeezed by rising minimum wages and high rents, more and more restaurateurs are looking to the suburbs.

The latest hotspot? Roseville.

The first-ring suburb is a bustling shopping destination, close to both Minneapolis and St. Paul, so it seems like a natural spot for restaurant growth.

And Baldamar, the shiny new steak-centric restaurant in an outlot of Rosedale Center, is evidence that the city is ready for the spotlight.

After transforming a challenging lakeside Wayzata site into his hit 6Smith, restaurateur Randy Stanley has turned his attention eastward, settling on a lot just outside Rosedale shopping center and building a ‘beaut of a modern-day steakhouse from the ground up. (Side note: Welcome to Keeping Up With The Joneses, suburban shopping center edition: Restoration Hardware opens a glitzy restaurant in Southdale’s parking lot, and now Rosedale responds with this glammed-up property). The showy, wide-open space is filled with all kinds of handsome, expensive-looking touches, including walnut- and eucalyptus-trimmed walls and a bar topped with Calacatta gold marble from Italy’s Apuan mountains. After spying (and smelling) the steak frites at a nearby table, I thought I knew what I was having for lunch, but my server steered me toward this massive sandwich ($18.95) instead. I was not disappointed.

Restaurateur Randy Stanley has a sequel in the works to 6Smith, the downtown Wayzata restaurant he opened in 2014.

Actually, “prequel” is the term Stanley prefers for Baldamar, the new steakhouse scheduled to open Oct. 16 near Rosedale Center in Roseville. His attempt to reverse-engineer a progenitor to industrial-chic 6Smith produced the just slightly more buttoned-up Baldamar, where the emphasis is on polish and service.

Randy Stanley, the owner of Wayzata’s popular lakeside restaurant 6Smith is opening a steakhouse near Rosedale Center in the fall of next year. Baldamar will open near the new Von Maur department store on a parcel of land near the northeast section of the mall. The restaurant will be a rare fine dining option in the area with steaks, seafood, vegetables and sides along with some sandwiches for more budget-friendly menu options.

A steakhouse called Baldamar, conceived by Randy Stanley, the owner of the popular Wayzata-based restaurant 6Smith, will open at Rosedale Center next fall.

Baldamar will be built on an outparcel adjacent to the Von Maur parking lot. Stanley plans to break ground on the concept in March and open in October of 2019.

"Normally, in some environments, you wouldn't want to do a mall," Stanley said. "Rosedale is the city center for the eastern suburbs. I like what they're doing — they're evolving and heading towards small, local crafty retailers, which is the opposite of other malls in the Twin Cities."

Baldamar, a “modern American steakhouse for the urban suburban,” will offer just that opportunity in the fall of 2019. The restaurant is a new concept from local restaurateur Randy Stanley, who also owns Wayzata restaurant 6Smith.
